It's not really a matter of programs, but of interface. You'll need to connect a USB audio interface. This will act as any normal soundcard.
Once you have that, you can use any recording program as if you were on a normal pc with a normal soundcard.
There are some USB audio interfaces, the best known being the Creative Extigy. But the price is pretty steep.
As for programs, you could use Soundforge, Samplitude, Wavelab, Cool edit...
I think cool edit is the cheapest, but still a great proggie.
