So im in the market for a coffin, but the biggest hurdle im encountering is finding one that will fit a xone32. While the mixer is superb, the odd positioning of the gains/crossfade controls makes it very unconventional. Does anyone know of a coffin that will fit my setup?

Yes, but the gains on the 32 are in the back - the only way you'd be able to pull it off with that coffin would be to have some sort of triangular block (maybe with velcro on it and the back of your mixer) positioned so the mixer rests at the angle you need.
Which, seeing as most mixers don't have the gains in the back, is what you're probably going to have to do, anyway...

Oh I didn't know that. That fucken sucks! hahaha Why on earth would A&H do that?
You can always get one custom made. Odyssey & Road Ready will make them for you and they cost about the same price as premade ones.

Or pick up road case foam and customize your coffin to the dimensions of your mixer.

If you're handy with carpentry and since the 32 does have mounting holes on its sides for a rack kit, you could customize an existing mixer slot on a coffin to work as a pop up mixer.
Just angle it in the case. I had an outdoor booth at our old place and realised I had the same issue when I tried to install the 32. Jerry-rigged it so the gains were accessible and had no issue whatsoever - and I tend to work the faders and EQs pretty hard when I play.
Will the mixer itself fit in the case without damaging anything? I have no problem pulling it out for gigs and whatnot. I imagined that it would even be able to fit in the standard 10" mixer space.
Realistically Id pick up a coffin for a 12" mixer due to the fact that I plan on upgrading at some point.

Yes it would fit by itself. In transport, I would add extra padding (case foam or similar material) to protect the mixer and the back of the mixer in transport. When in use, you could use the foam to angle the mixer (like Pivot said) to pop up the mixer to access the gains.
I have a coffin designed for cdj-1000 but I use 200's. I just pad the crap out of it.
