Take DJ Sakin's old remixes (e.g. Braveheart) as an example. Gating is just that sound. It is some kind of volume command, that drops the volume at certain points. In the good old mod trackers you made gating by changing the volume for every new step forward in the beat, like 64-16-64-16, where 64 is max volume, and every 2nd is only a fourth of the volume (16). That's just a basic example.
EDIT: Hmm, I wonder if I'm using the right term now. What I want to achieve is gating on the main melody lead (e.g. a pad or a string that normally would be just a plain long tone). After reading the gating part in the very nice FAQ linked above, I'm not sure if I was using the word "gating" right...?
