Do you mean minimize to the system tray? I beleive outlook minimizes to the task bar by default, although I avoid using it so I could be wrong. To minimize it to the system tray edit, or create if it does not exist, the following registry key (do so only if your comfortable editing your registry).
Hive: HKEY_CURRENT_USER
Key:Software\Microsoft\Office\10.0\Outlook\Preferences
Name: MinToTray
Type: REG_DWORD
Value: 1 = System Tray, 0 = Taskbar
