Synthedit is really nice, I find that when you build your own synth with it, you can control that thing much easier than one you buy or get from somewhere else, just because you already know about what all the stuff inside it does.
Reactor is somewhat similar to synthedit in that you can build and intrument out of the pieces, vaz modular does the same thing too.
Audiomulch is another package that lets you build sound out of little pieces, it is quite tricky though, I would advise making samples with it rather than trying to make whole songs. Another one is spiralsynth modular, its an open source modular synth thing, haven't used it much but it looks pretty cool.
There are so many fun sound generation programs out there, its a shame that people insist on using the same ones all the time.
