Well if you are familiar with producing and/or you plan on using hardware synths, then I would upgrade to Logic Pro, as that seems to be a common setup for most using G5s.
But if you are just starting out, then I would start off by downloading the Reason 3 demo (if you haven't already) and play around with that for a while to get a feel for producing. Reason is a great tool with an excellent GUI that makes it easy to use for beginners.

You can do some pretty amazing things a Dual proccessor G5 and Logic Pro. I would go with Logic.

Cubase is pretty damn powerful, but logic is too. Digital performer is for mac as well and is good. You can also just use protools.
All sequencer programs are the same I feel just go for the one that you like, I would try them out before deciding on one.
For pc I had the choice of protools, logic, sonar, cubase and I chose cubase since I liked it more then sonar and logic was going over to mac. Protools was out of my price range but now they offer le packages for less. Protools is still expensive in my opinion.
