I think that Ozone - Rock (Original mix) has a pretty good build up. And I think Exploration of Space is a classic example of a pretty decent build-up.

George Halles - Autumn Falls has a pretty mad build too. Not huge, but really intense.

Astrix - Coolio (Infected Mushroom remix) has to have one of the most stupidly long wind ups. Completely destroys the dancefloor.
