i have my set up where it goes from the mixer to a box of some sort and then it goes to the computer with a USB cable. the box has a couple of dials on it and i have messed with them and have it set good but it still cant be loud.

the box is propably a DI...
though try to adjust your gain of the output on the mixer or in windows control panel or anywhere
your problem might be because the level of the volume coming into the computer is way too high so it clips (distorts) when you decrease the level acurately so your peaks won't go to the red part of VU meter you will get a nice sound...
also you might want to aply some normalizing or maximizing to bring it to a more solid level.
Though decreasing gain of the input is only thing which comes to my mind to solve your problem...I think Audacity should be no problem really.
btw
the DI can make your gain higher (so level 2 on your mixer doesn't mean anything) try to lower it in windows mixer
(btw I may be totally off I didn't read your post that carefully as I do now realizing that I write something you propably know about)
