Can't you buy separate filters for your custom fit earplugs, and swap them as necessary? (The filters are what lower the sound, meaning you can change from 15db to 25db whenever you want).
I can only speculate here, but it seems to me like the average club wouldn't normally top 110dB (I could be completely wrong). 15dB reduction would leave you at around 95dB, which is apparantly safe for up to 4 hours before any real damage can begin. So if you're planning to be in the club all night long, every weekend, you might want more.
The only thing I can really tell you from experience is how my ER-20's worked for me (those are the one-size-fits-all cheap ones). They have a reduction level of around 16dB. I wore them at WMC last year. I could go into Space (LOUD) and get punched in the ribs with bass for 10-12 hours a night, and come out the next morning with nearly fresh ears. They felt a little bit worn out (a common feeling), but I had no ringing, no pain, no difficulty hearing common sounds, and within 30-60 minutes my ears felt as good as new. I could hardly stand to take them out, the shrill highs were just screaming in my ear. Without them, I'd have been fucking deaf by morning.
