One of my faves I used to play with my brother on our family road trips was the gas station game.
I counted the stations on one side, and he counted the ones on the other side, and the one who counted the most on their side the next time the car stops somewhere, he wins. Stations don't count if you just passed them.
A fun part of that game is when one of the player's mind wanders, it springs back into attention when an apponent starts counting again, and you kick yourself for missing a few. Game can be altered depending on where you're travelling, like using farm silos, IHOPs or other common business that usually line a highway.
