but when would you call a song a "Dub mix"?

Assuming the original version of the track has vocals, in the dub mix they are partially or completely removed; it's almost the same as 'instrumental'.

When there are no vocals to take away, 'Dub' usually indicates more subtle version of the original.

It's an old and much-asked question on TA. The use of the term "dub" varies, but essentially a dub is a track with the higher frequencies removed.
