they showed a cut of that guy that had his entire calf muscle bitten off by either a bull or tiger shark during shark week a few years back. It happened as he was saying how a human can be in the water with a bunch of man eaters, then bam it latched onto his calf.

That was a Bull shark and yes they are one of a couple of unpredictable species. The thing is, if that shark wanted to it could have locked its jaw down onto that guy. But it was only a test bite.
In the unlikely event you do get seriously hurt in a shark "attack" (only 1 person died last year) then its more than likely it will be from blood loss from one bite than being eaten alive.
