I'd say replicating an existing track. Pick a favorite, but also not too busy. It forces you to learn how certain parameters affect the sound. You'll get to points and ask yourself, how'd he/she do that? After a ton of that, you'll be able to have a thought in your head and get the sound out of your synth.
As far as remixes go, I usually change the melody entirely around the vocals (I tend to do remixes of songs with vocals, so that I CAN change the rest of the song entirely). Keeps me on my toes, try it.
