As a beginner which is the best route? I mean, I've tried both and I thought remixes would be easier, what with the general melody and direction of the song already provided...

but I'm finding it easier to make my own stuff... I mean, its not brilliant, but ya know... it has the fundamentals...

it really doesn't matter making new production or remix. both way are good to training your skills.

i would say personally do youre own first and get a hang of things then do a few remixes

I'd say replicating an existing track. Pick a favorite, but also not too busy. It forces you to learn how certain parameters affect the sound. You'll get to points and ask yourself, how'd he/she do that? After a ton of that, you'll be able to have a thought in your head and get the sound out of your synth.

As far as remixes go, I usually change the melody entirely around the vocals (I tend to do remixes of songs with vocals, so that I CAN change the rest of the song entirely). Keeps me on my toes, try it.

The way i learned synthesis was to go to nonstop2k.com and download a bunch of midis and try to replicate the sounds and turn it into a remix.

Whenever I try remixing, things end up going pearshaped... but I've only tried it with acapella's and I always end up slicing bits hear and there, then the bits that I slice end too abruptly and end up not fitting. The point that you've made about asking how did they do that is right tho. I've done that many times and ended up coming here and asking or going to youtube for a tutorial video on how to get a certain sound.
