Crockpot with pigs feet, onions, bay leaves and a bit of jalapeno juice. Add seasoning to taste. Serve with sweet cornbread.

and dad, well dad is a mutt, Mexican (his mom), Tejano and Indian (his dad) and I swear some Chino thrown in due to all of my cousins on his side looking Asian.. lol
but Yeah, I claim Mexican....and so does the Man when they hassle me 
but Mom stopped cooking the good shit when all of the older kids moved out, I was the baby of the Fam of 5, the only thing I learned in Mexican Food area is home made tortillas (and I am not talking about that pre mixed shit, I am talking about the Masa Trigo home made shit), a fucking killer Taco meat and my fucking **Carne Guisada beats anyones down in these parts...
I think my mom stopped making good food after her and my father got into a huge argument and she packed his bags, she asked me if I wanted to stay and at the age of 10 I told her, "He has the job. I am going with him." she then started to pack mine.. lol
they have been married for damn near 50 years....
going to family reunions is like the rainbow coalition
**did try to give up beef, but you know how hard it is for a Mexican not to eat beef?? lol

ahh well that's pretty good. i like the beans with cilantro, comino, chili powder, a pack of bacon scraps, onions, tomato, garlic, and salt/pepper to taste. Oh and some beer in the stock works great. You can strain and mash them in a pan with some oil to make refried.

this is the bean recipe to end all bean recipes.
2 cans pinto beans
2 cans light red kidney beans
1 tomato
1 green pepper
1 jalapeno pepper with half of its seeds
for the above ingredients, you need to lightly mash them in a food processor one by one (although i usually do the green pepper and jalapeno pepper together) and then transfer them to a plate or bowl. they shouldn't be pureed. you should still be able to see bits and pieces of the food.
olive oil
4 cloves garlic (crushed)
chili powder
hot chili powder
ground cumin
ground cinnamon
ground cloves
juice of half a lemon
beer
shredded monterey jack or any other variety of yellow/white mexican cheese
salt to taste
in a large frying pan heat 2 tablespoons of olive oil over medium heat and then add the crushed garlic to it until it is lightly browned. at this point, you're going to add a heaping mound of chili powder, maybe 10-15 shakes of hot chili powder, cumin, and cinnamon, and 5 shakes of cloves. [sorry i can't give exact measurements, this is a recipe i've always done by eye and taste.]
let that simmer for a few minutes while the flavors cook together. then add your tomato, green pepper, and jalapeno and let it simmer for a few more minutes. by this point your whole house should smell of spices.
add the beans a little bit at a time and stir them into the veggie spice mixture. they will be on the dry side so it will take a while for them to mix in completely. if they seem too dry, add a splash of beer (which you have already opened because who doesn't enjoy drinking while cooking?) and keep stirring them in.
once your beans are all mixed in, let them cook over the stove for a while. continue stirring and drinking. once they get nice and bubbly and you can't stand to let them cook any longer, throw in a splash of lemon juice and a handful of cheese and mix it up until it's all melted together. at this point, you're going to want to do a taste test and see if you need to add some salt or if there's any other spices you need to add. the spices are the main focus of this dish and it takes a bit of adjusting to get it right, but once you get it... you're gonna love it.
enjoy in a warm flour tortilla or as a nacho topping or dip for chips. save the leftovers in the fridge - the flavors are even better the next day.
