I had a G5 dual 2.0 3GB ram for many years and now I own an Intel Quad 2.8 running LP8. Nothing is ever fast enough, nothing will be. With that in mind I still suggest you to go for cubase on a quad PC instead of logic on a G5. G5s are very slow compared to today's standards, you will have less headache on a faster computer if you are mostly software based. While logic is a great host, if you're not used to it there is no reason to buy a slow G5 to run that program. I haven't used Cubase since VST32 days, but I know that there is nothing wrong with Cubase, specially when you run it on a fast Quad PC.
If you are still desperate to run Logic build yourself a hackintosh or ask someone in the know to do it.
