Well aside from the Mall, there's Hiawatha Falls since you're into nature. Summit Ave. in St. Paul is pretty cool - victorian houses and cafes all over the place.
There are a ton of art galleries - I'm partial to the Minneapolis Art Institute, but the Walker is really cool too, and they have a huge outdoor sculpture garden. Great theater district too - second-largest in the US after NYC.
Beyond that, there are a bunch of parks and good bars all over the metro area. It's definitely an under-rated city.

35W is some what under construction, but has 2 lanes open going both directions. It really doesn't take too long to commute through the city, as traffic is sporadic around here. 35E goes through the east side of the city (into St. Paul), since I'm from the western burbs, I don't really venture over to St. Paul very often so I'm not sure if the construction in that area is bad or not.
