Goose died because he was a candy-ass! He was Maverick's weak link. Jesus, you guys take one scene out of context and deduce that Maverick's just acting in his own self-interest but to accept this you have to completely forget about the volleyball scene. Guess who still had their shirt on, ambling about the field looking milquetoast and utterly humiliated by comparison with his peers who are all essentially the embodiment of Nietzsche's supermen. Even his call-sign, Goose, is deliberately ambiguous concerning his gender.
If Maverick and Iceman embody the masculine ideal, Goose (either gander or hen) personifies androgynous impotency. He is hesitant, constantly nagging Maverick to temper his actions, and his position in their relationship is utterly superfluous. Maverick isn't letting go of a cherished friend but honoring his friend's inherent weakness by doing something which should have been done, long ago: sentimental garbage removal.
