Yes, I know what you're talking about.
The classic tracks by Union Jack released on Platipus Records. I have both "Red Herring" (1993) and "Two Full Moons & A Trout" (1995) both on Platipus compilation albums. Not too sure which I prefer, but it's probably "Red Herring" as I remember it when it was released in 1995. I used to be a huge fan of Platipus Records back in the mid 90's with all the quality tunes from Simon Berry and Claudio Guissani but kinda lost interest in the stuf they were releasing by 1999. My favourite release of theirs is Art Of Trance - Madagasga with the Cygnus X Remix and Loveclub - The Journey.

"I’m a dance floor favorite? Great! I would say the passion that I feel for the music I buy and the honesty with how I play it. I play the records I love not the ones that simply work. I’ve never taken the easy music option (which would make me a lot more money by the way) but chosen to push people a little. I try to draw people in a new direction slightly and expand their taste a little more than other DJ’s." - Lee Burridge

Two Full Moons and A Trout has to be one of the top 10 all time best trance tunes, so you MUST do what you can to know this track! It was on SOOO many compilations back in the day (1994), so it shouldn't be too hard to find.
