AFAIK there is no legal way to change your name in Germany, unless your a child and your parents separate and your mother takes back her maiden name and then only under certain circumstances.
What you can do in Germany is to add your artist name to your passport. It won`t become your "legal" name but it will be put into your passport and photo id.

I do not know anything for certain. I have heard his real name is "Matthias Paul" - but that could simply mean his middle name is Paul, which he goes by, and his last name is really "van Dyk" For instance...I go by my middle name too.
