i have never made a chutney to be honest, but i think i will attempt one this week. I certainly eat it enough. Report back if i come up with a good recipe after a lil research.
Yes Adam, towel off the excess marinade to prevent burning. You just want a light coating, not huge globs of the stuff. If you let it marinate long enough, all of that flavour should be in the meat
tonight i'm making one of my special recipes that i thought of by myself, although i'm sure it's been done before.
shredded BBQ chicken sandwiches on keiser rolls with blue cheese mayo.
blue cheese mayo:
crumbled blue cheese
mayo
worstershire sauce
garlic
make it so that it's like a paste and spread it on the toasted keiser roll and add a little pile of the shredded bbq chicken (which i make from scratch by first grilling it and then pulling it apart by hand). bbq sauce is homemade too. oh and the only other thing i do is a tomato slice on the sandwiches.
they are pretty fuckin yum if you ask me

Ya I usually wait until the bastard is cooked, then put the sauce on, then cook it on low for a few more minutes so that it isn't dripping.
Not sure what kind of sauce to use though, chicken can be tricky business.

if you have a torch put it on at the end and give it a quick burn for peking style skin. Easy bbq sauce = beer, ketchup, worcheister , cayenne, liquid smoke, molasses, brown sugar, and cumin. Just bring to a soft boil then reduce it over low heat, the fun part is you can add the ingredients depending on which flavours you like best, no need for a recipe
beer on the chicken? or you mean as part of my bbq sauce. i've heard of beer with brautworst and sausages but not chicken.
