Here's another example of multiple course meals/tasting menus.
I did this on my birthday at Craft here in Los Angeles:
| quote: |
Warm Local Sardine, Valencia Orange & Fennel Gastrique
Veal Tortellini, Saffron & Tomato
Black Sea Bass Pot Pie & Shell Beans
Roasted Quail & Apple Crepe
Wagyu Skirt Steak, Savory Bread Pudding & Chanterelles
Blaues Wander Cheese (Bern, Switzerland)
Crème Fraîche Panna Cotta
Lemon Verbena & Mixed Berry Sorbet
Pineapple Tatin
Avocado & Coconut |
Then when I was in New York a few months ago I went to WD~50 and had a variation of this (they change their menu pretty frequently):
| quote: | Smoked mackerel, plum, cucumber, morcilla
Grilled corn pebbles, lime mayo, scallion
Hamachi tartare, wakame, sake lees tahini, grapefruit-shallot
Knot foie
Eggs benedict
Crab tail, soybean noodles, cinnamon dashi
Chicken liver spaetzle, pine needle, radish, cocoa nib
Beef tongue, cherry-miso, fried quinoa, palm seeds
Blackberry, honey, sour cream, green tea
Jasmine custard, black tea, banana
Toasted coconut cake, carob, smoked cashew, brown butter sorbet
Yuzu ice cream-marcona almond |
They bring each course out one at a time, it's not as if you have 12 dishes on your table at once
