7 course meals are very small portions designed to compliment each dish and make the palate react accordingly.

the amount of time and preparation needed to pull it off right is staggering. Even finding the right wines, aperatifs and digestifs to make it a pure progression of the senses can take days of research.

even the fanciest restaurants are not that fancy. The best food is simple, not overpowering while playing on the food's natural strength and showcasing local fresh products.

what jamie made is something you would see that whore rachel ray make with canned tomatoes in 30 minute meals.

i never said it wasn't tasty...it just isn't exactly the kind of recipe they taught us about in culinary school.(yes i went when i was younger).
You learn this recipe on the back of a cambells soup tin

Here's another example of multiple course meals/tasting menus.

I did this on my birthday at Craft here in Los Angeles:

Then when I was in New York a few months ago I went to WD~50 and had a variation of this (they change their menu pretty frequently):

Eggs benedict

Beef tongue, cherry-miso, fried quinoa, palm seeds

Blackberry, honey, sour cream, green tea

Jasmine custard, black tea, banana

Toasted coconut cake, carob, smoked cashew, brown butter sorbet

Yuzu ice cream-marcona almond


They bring each course out one at a time, it's not as if you have 12 dishes on your table at once

the first one looks ace, the second one a bit cluttered, but i would not comment on it until trying. Very ballsy combos, intrigued.

That's WD~50's "thing". They blend food & science to come up with some crazy dishes. It's all very weird sounding and sometimes impossible (I had fried mayo and beef tounge ), but it's AWESOME. If you ever get the chance to check out a place like that I strongly recommend it

The plate was like a Jackson Pollack canvas. The kid is an artist.

If Jamie took longer than usual to prepare this - then it was special/fancy whatever.

To someone who eats dempster's bread with individually wrapped cheese slices for lunch every day, then stuffed peppers with oregano or whateverthefuck is "fancy".

To someone who eats baked cod with jasmine and mint jelly with a side of sauteed brains all the time, then it takes more to impress them.

A meal is special if you put time and effort into it. That's different for everyone.
