Details are important here, IMHO. It was definitely overboard to start cursing at her nonstop and throw water at her a day later, but as for maybe just spitting in her face and walking out? Well that depends, let's look at the two extremes...
1. Casual outing, pre-existing friendly relationship. Guy is drunk and hitting on girl obnoxious/generally being a dirtbag, a cocky arrogant ass... girl throws her drink and walks away. In this case, guy should definitely *gracefully* exit the scene. He had no dignity to begin with, so it's not like he's lost any.
2. Nice place, minimal to no pre-existing relationship... guy is all spiffed up in a nice suit and tie (definitely not something you want to scrub wine out of). Guy is being a perfect gentleman and girl is having a PMS attack, burns her hand on his cigarette, starts cursing at him for 10 minutes while guy stares in utter shock, then finally throws drink at him. In this case she's completely robbed him of his dignity, and she certainly deserves a wad in the face if he wants to give one to her.
Other details matter too... if she's one of the feminist types and still thinks she can throw drinks in guys' faces without hesitation, then that's not cool, double standards are crap. We don't really know their personalities, so it's hard to say - maybe she was pushing his buttons too and the drink was just the "enter" key.
Obviously these are the two extremes and the actual situation was probably somewhere in the middle... I'd say with regards to the specific situation, she overreacted and he overreacted even more. But it's hard to say not having witnessed it personally.
