In my old FL days, I used to do everything with the mouse...I can say my tracks sounded very good for just using a mouse, but it was way too time consuming. Anyway, what I do now is I put Cubase in syncro, turn the metronome on and start playing the melody. Then I quantize it and add other notes that I couldn't play on the keyboard because I wasn't fast enough or I didn't have enough fingers to play it, hehe. Then I press record to record the automation of the knobs on the synth I'm using for the sound.  If it's a simple bassline or melody that can be played with one hand, I'll tweak the knobs on the fly.
