Actuary ( i don't know if the spelling is right), thats the hottest job you could ever find. Companies basically fight over you plus crazy salaries and NORMAL working hours, not like a doctor or nurse.

in the IT, anything related to security, pretty hot field right now.

Oh man, actuaries have always been insanely in demand, but it's soooooooo hard to do... actuaries are the people who thought accounting was too exciting.

Earn shit load of money

There are something like 7 tests you need to pass, each one more difficult than the previous. Apparently upon passing all 7 you are pretty much guaranteed to earn somewhere around 500,000K / year

That's what I heard.. May not be 100% correct.

EDIT 1: It appears to me that any person with sufficiently good mathematical skills can pass all 7 tests. The main problem is not the level of difficulty, but level of "boredom"

EDIT 2: Univeristy of Waterloo has a pretty good Actual Science program(possibly the best in Canada), which is a co-op program. And I can confirm that people(who aren't even all that smart btw) are sometimes earning pretty crazy amounts even during their work-terms.

For reference here is a link to average salaries earned by UW co-op students in different programs. The average excludes top 10% and bottom 10%.

Salary Survey of UW co-op students.

This is a good approximation of relative salaries when you start working full time.

anything in Accounting is high in demand..

people with the CA or CMA designation and CGA to a lesser extent are always sought after. Depends on the field.. Geomatics or GIS is becoming more and more popular as well. Electricians/brick layers skilled tradesmen, somebody said nurses - yet they still don't get paid very well. Doctors however are always in demand. Social workers, public policy, are hot areas again. Government seems to be re-vamping a lot of policies and hiring a lot of public policy advisors.
