Catherine Bell (the female lawyer in JAG) is also Persian. (Bell is her stage name). Mmmm....
In my own experiences, the word "Persian" is used to refer to those who left Iran before the revolution, or to those who remain in Iran and consider themselves revolutionaries. Iranians are Persians, but those who call themselves Persian first tend to do so because they'd rather identify with the culture than with the state.
Also, as others have mentioned, they don't speak Arabic. They speak Farsi. It's a really interesting language, as it's written like Arabic, but its sentence structure is more like European languages. I tried to learn a bit so that I could pick up some conversation with my distant relatives, and it wasn't too bad as long as you stay to the spoken form.
As for looks, I think Persians in general are a bit more fair skinned than Arabs. I am able to tell the difference most of the time, but there are just some certain features that tend to come from the Persian bloodline that you get used to seeing after a while.
