haven't seen you in ages.... that makes sense because "ages" have time contained within them.
havent seen you since... last tuesday (or whatever) that makes sense because you're specifically referring to a past time when you did see the person
havent seen you in forever.... sounds better than saying havent seen you forever but grammatically I'm not so sure its right....
I'd put a smiley with the nerdy spectacles at the end of this post but I can't find one...

you wouldn't say i haven't seen you a long time.
