that's quite a task! I don't know the price of that, nor do I know if your local symphony has the greatest recordinggear or not, but if you plan on doing it often, maybe you should look into Gigastudio. I don't have the reference by hand right now, but there's a version that is dedicated to Orchestral and Piano. I remember it being very expensive, so if you plan on doing it for once, and in a legal way, then look for alternatives.
Me myself, I use rompler synths for my piano and orchestral sounds. But I record every note of for example a violin with a different altered Patch-sound to capture the right nuances, to create more realism. It's 10x the amount of work, but for small passages it can really pay off if done well.
