Yes, exactly. It's not hard for a professional producer signed on a well-known label to get the acapella for a track - if the original track was signed on the same label, it's a piece of cake, and if the original track was signed on a different label, then that label will take royalties from the remix.
The sad part is that some of these bootleg remixes actually get signed by the label that released the original. But more often than that you'll just get into trouble with the copyright laws if they find out about it.
