That's the trouble with being self-employed, Eric - you never know what kind of assholes you'll have to deal with.
Personally, I would charge time-and-a-half for all the extra hours beyond what was originally planned. Tell him to consider himself lucky that you're not charging double time, because in order to get this job done you had to pass up an opportunity with another client that was worth twice as much.
It sucks balls when clients change their requirements on you in the middle of a contract. When this one gets your bill, he'll learn that's not an acceptable practice.
