To answer all your questions:
- You can make the deadlines on auctions whenever you want
- Buyers pay shipping unless you specify otherwise; it's in your best interest as a seller to find out the shipping costs and list them in the auction to avoid disputes later on
- You set the starting price and, optionally, a reserve price (the auction gets cancelled if the closing price is less than the reserve)
- eBay charges a listing fee and a final value fee; that's how they make money. However, these fees are essentially peanuts to you. If you sold an item for $20, the total cost to you would be $1.65 which leaves you with $18.35. For more information look at their Fee table.
- You should definitely NOT back out once the auction is finished; you'll receive negative feedback and as a result will have a lot of trouble selling anything else.
eBay can be a little complicated for new users, I didn't realize you'd never used it before so I understand why you're wary of that. It's actually a pretty good resource if used properly, although if you're not careful you could get scammed or lose money some other way.
