My favorite has to be PVD Live @ Einslive 3-10-03! Its a nice quick mix with some hard banging tunes. Also like said before his Cream Amnesia set 8-16-02, as well as his Jahre Maximal set of this year. Both are superb.

Einslive Einheitsrave 2003-10-03
and
Gallery Turnmills 1999-04-04
and
Mayday 2002 (I REALLY love the song "the crowd song"
and
Dance Valley 2005-08-06
I really love his energy sets the most. His dance valley set this year is sick!!! But the first mentioned is my fave because of the songs and that he pitch the tunes a lot!!! I LOVE

It would be hard to pick only one, because I have many favorite sets of PVD's...here is a short list of my favorite sets:
Live at HR3 Clubnight February 1993 (yeah that's awhile back)
Mayday 2000 (probably my favorite)
Rosenmontagsrave 2002
Nature One 2002
Mayday 2002 Germany
Mayday Polska 2002 (the first 15 minutes of this set was bangin techno!)
Essential Mix (21 December 2003)
As you can see, I didn't list anything from 2004 or 2005...I just don't think the live stuff he is playing at his shows now matches the same level of intensity that his shows used to...I prefer his live stuff from 2000-2002 much better than his live sets of 2004-2005...it seems Paul is canning the same tracks at almost every set, and there's not the same degree of originality in his track selection as there used to be. Nonetheless, I'm still a huge fan, and I think he's a master at what he does.
peace.

well said!!! I tried to state that in the review thread for his roxy show here in NY on the 11th and the whole thread was "trance is back...pvd is great" it's nice to see that there are some who think that he has moved away from from what he was doing not too long ago. like you, i am still a fan and think he is really good at what he does.
