I heard PvD used 3 TT @ his Gallery Turnmills set that is always floating around.
I know the up and coming UK DJ Paolo Mojo uses 3 TT's really powerfully to mix up tracks, and then house/breaks DJ James Zabiela uses 3 turntables to do live remixes/combos of songs.

more common than you think
I don't too many dj's that use 3 decks for the whole set, but I have seen many many dj's use that third turntable for mad tricks
On that Mayday video of Paul van Dyk, does he not use 3 decks for like 20 seconds when he mixes in "For An Angel", just to have it mixed out like 10 seconds later. I forget but I'm pretty sure he mixes that one with 3 decks, it's very fast. It can be done on two, but for some reason I remember three! eh!
It's kinda pointless for trance, but for techno or house, it's key.

Really useful regardless of genre when you want to play a short short track. I have 2 tables and 1 CDJ, I'll match up both the CDJ and the 2nd TT while the first TT is playing. If a song is short, it would be fairly hard to match up the next song in such little time (being what I would define as a beginner). Marco V used three tables at Sensation, I didn't see any of it but you can hear it (or maybe a CD, but regardless, 3 sources in use), when Chris Cowie - Roamer comes on, he has Saccoman - The Recall (Picotto Answer Mix) going throughout the song in the background, then brings in Tiesto - Flight 643 for a bit, all of this going on in too short a time to be swapping records back and forth and queuing/matching up on two tables.
