Is psy trance the best representation for the whole trance genre? Specially if you want to explain to a beginner what trance is.

I would say something like Binary Finary - 1998(Matt Darey mix)

Why not? It was what folks drew upon for samples for the first third of trance's life. Well, that and hard trance coming out of Germany.
