Im a Logic Pro user, and im getting closer to acheiving this by the day.

I would be interested in how you would do this in ableton, as i do have that aswell.

It would be with the Sampler instrument in Live 6, making use of the envelope to modify sample pitch and going crazy with the LFOs. There's a 2-part 13-minute video on youtube of Robert Henke doing some similarly crazy shit with it, you can find the link pretty easily on youtube.
