The thing with Infected Mushroom is that each album is almost substantially different from the next. That being said it really comes down to preference with which style of them you like the most.
I'd say it's safe to assume that 90% of fans would agree that their second album "Classical Mushroom" is their masterpiece album. It's highly melodic, full of chord changes, weirdo fx, and just all out craziness. If Infected Mushroom started a psychedelic symphony it would sound like this album. This too is my favorite album.
Their first album "The Gathering" is pretty dark and raw. It's ok, nothing amazing. There are two really standout tracks (which were their singles too) "Release Me" and "Psycho"
Their third album, "B.P. Empire" is very deep and dark. It's a melancholy album which can move through your soul. This album took me a little bit to warm up to but now I finally "get it" ESPECIALLY the last track "Dancing With Kadafi" which in my opinion is one of their most brilliant and most complex and variated songs.
The next album after that was the double disc "Converting Vegetarians" which was a bit of an experiment. They had just got new equipment and they spent two years playing around with it. The end result was one disc of "trance" which was lackluster and a bit of a disapointment to most. And a second disc called "The Other Side" which was a bunch of experimental downbeat tracks which was actually quite refreshing. This is the first album where they introduce real singing vocals. Some love the vocals some hate them... it's a hit or miss.
The most recent album was "IM The Supervisor" which is almost a middle ground of where they were, musically, during Converting Vegetarians and now before releasing their upcoming album "Vicious Delicious" in March. This album is strong with the beats, a little minimal with the progression of tracks but rich with fx and such. The highlights of the songs are always very nice. Electric guitars are implimented in plenty of the tracks and they are executed amazingly well, especially in the last track "Stretched." There are once again some vocals on this CD. This sound is more of a "party" sound which is seemingly what they were going for since they were booking more and more gigs, they wanted to play party music.
Finally we have "Vicious Delicious" which is coming out in March of this year. From what I have heard from the livesets I have seen and the samples people have posted this album is more vocal heavy than the rest, includes a lot of guitars, and is really driving and more energetic than "IM The Supervisor." They set out to make a marriage between Infected's style of Psy-Trance and rock music which inspired them and out came this album. It's still very much Psy-Trance but there are a lot of rock influences, which in my opinion is fantastic because guitars are my favorite part of that genre and Infected can impliment them sooooooooo well, so bring it on.
Basically there are many choices when it comes to exploring Infected Mushroom. Hopefully I have helped you in which direction might suit you.
Oh and BTW, it'll be hard to find anything to top Symphonatic, with the exception of "Bust A Move" from their Classical Mushroom CD. Symphonatic is still one of my favorite songs of all time. Hearing it at an Infected live show is like having sex with the devils hot sister.
