For Valentines Day I took her out to a restaurant on the water that had a view of the city's skyline and got a 2 person table at the bay window.
Upon our arrival I had a single red rose and a $70 dollar bottle of champagne waiting for us with rose petals scattered over the table and candles.

When I gave her her ring I took her to restaurant on an island in Miami that had a 270 degree waterfront. You had to check in at a gate guard that called in ahead to see if you had a reservation or they wouldnt let you in.
We got in and there was a live pianist with a flute player playing Berserk style crazy sounding music that was just hauntingly cool.
Had appetizers, few drinks, awesome dinner. Then ordered a flaming bahama-mama dessert that was a pineapple with top cut off and filled with ice cream and caramel that had 1 foot of blue flame coming off of it to caramelize the whole thing and melt the ice cream a bit.
Between dinner and dessert gave a little speech and gave her the ring :*)
Also, since we are both Christian, start the dinner off with a prayer and held hands and stuff.
Romantic dinner = cash though. Unless you want to go on a short hike with a heavy pack full of wine, bread, cheese, a groundcloth, etc... open that check book hehe.
