I personally like to beatmatch with both cups on. That gives you a much better precision. I tend to like longer transitions though and my decks are not that good (.1 pitch resolution). Because of that I need to take off one cup and and listen to what's coming from the speakers and ride the pitch accordingly.
As for your statement about cheating - I really don't see how cheating is possible when spinning. Unless you plug in a pre-made mix and look like you are doing something. But then again - that will not work, because you really need to adjust your track selection, based on the crowd.
