well almost all the population is catholic but only the most religious don't eat meat during the eastern fridays. I'm spanish and I eat whatever I want and whenever I want, like almost all the people. nowadays catholicism in Spain is not as important as it was in the past!
about special days relating to food, we should look in each region. for example in mine it's typical to eat "canelones" (a pasta rollo with meat inside, and hot cheese around) on 25th december.
and generally in the restaurants they serve paella each thursday. just a note, paella is original from Valencia and there are many kinds of paella, with / without seafood, with /without meat, yellow paella, black paella, vegeterian paella. . .
