I think it sounds pretty ugly when and open and closed hi-hat play at the same time. I avoid that, and other sounds that are completely unnatural. Incidentally, a drummer most certainly can hit a closed hat and snare at the same time, what do you think the foot pedal is for on a hat?

When it comes to bongos, shakers, claps, etc., things that aren't part of a drum set to begin with, then you might as well relax those restrictions because in a real band or orchestra they'd have multiple percussionists. But the basic "drum set" of kicks, snares, and hats, really should be humanized if your target audience includes anybody who might also listen to rock music or have listened to it in the past.

Also, once people put down the crack-pipe of pattern sequencing, it's easy to do other humanizations, mainly taking out or shifting random bits from the drums in bars and/or inserting fills.
