For the amp release in z3ta, make sure the track is armed, then right click on the release slider, midi learn should pop up - then just move whatever knob on your controller you want to assign to control the release, and thats it
If you go around setting up your various parameters in z3ta they should be remembered for every time u use it, but be aware that some parameters may already have a cc assigned, you can right click on these and choose "midi forget" and then u can assign your own cc's
