If you're just starting out, I'll be semi controversial and say Classic Euphoria: Level II. It's as good a starting point as any, has some real classic numbers on there, not all predictable, hardly any cheese, and Burnett's mixing is sublime. Of the 'Classic' albums out there this is easily the best I've heard.
My all time favourite trance album is either Sander Kleinenberg's Nu Breed 4 or Sasha's Global Underground 13: Ibiza.

This is a good list but I would note that the Chicane and BT albums are only about 50% trance at most, and I would consider the WOW album progressive house and progressive breaks, not trance. Still a great album though.
For more recent entries, I would recommend Mirco De Govia and Vibrasphere's albums. I also enjoyed John Askew - Lower The Tone, although it's a bit harder.
