Oh! Forgot about one of my favorites!!! Chicken pesto wraps!!

Spread about a tablespoon of pesto on a whole grain tortilla (like you're saucing a pizza). Then get yourself a roasted chicken (or roast one yourself, or just use grilled chicken breast), shred it or cut it into chunks, and add it to the tortilla. Dice some red onion and avocado, and add this as well. Add some chunks of frozen spinach, sprinkled some of your favorite cheese on top, and put it under the broiler for a few minutes, until the cheese is melted and the spinach is thawed.


Take it out of the oven, roll it up, and enjoy!!

Just buy a whole roasted chicken from the grocery store then. Take off the white meat and use it for wraps/salads/sandwiches/whatever, and put the carcass/wings/ aside.

Chop:
1-2 onions
2 celery stalks
1 large carrot
a good handful of fresh parsley
Any other veggie you want...I like mushrooms and parsnips in mine, last time I put turnip.

Put all of that in a large pot. Add 1-2 whole cloves of garlic (whatever your preference), 1 or 2 bay leaves, and a few whole sprigs of fresh thyme. Salt + pepper to taste.

Add your chicken carcass, and add enough water to just cover it. Bring it to a boil, then reduce heat, cover, and let it simmer for about 4 hours. Make sure you're checking on it every 30 mins-hour and skimming the fat, or else it'll be greasy and that's fucking gross.


If you want noodles, wait till the end to add them. Potatoes are a good, hearty addition as well.


You want to know how to roast a chicken? Lol.



edit: Don't forget to take all the bones out of your soup once it's done cooking, lol.

Oh sorry...yeah it's really easy. I always broil mine.


Take your broiling pan and it put on the top rack of your oven, so it's about 4 inches from the the heat. Jack the oven up to broil and let it preheat for 10-15 minutes. When it's ready, brush a bit of olive oil on the pan and add your chicken to it.

Should take anywhere from 7-10 minutes per side, depending on the thickness of the chicken. You'll know it's cooked when it's no longer pink inside/the juices run clear.

With broiling you kind of have to be diligent, otherwise you risk overcooking it and it'll be dry and nasty. Again, once you do it a few times you'll know how long to cook it for.
