You need to understand, though, that every country who makes ceviche [Costa Rica, Ecuador, Mexico, Peru, Panama, etc.] has their own completely different style of preparing the dish.

Make sure to try the Peruvian ceviche when you can. Not that I'm biased or anything.

Some of the recipes include raw fish, which is just asking for some kind of screaming intestinal disorder... not that you and Sushi seem to be able to manage some intestinal disorders between you without raw fish

That's what the limes are for. The citrus juice denaturizes the fish. If prepared correctly, not only is it not unhealthy, it's extremely healthy for you.
