Actually this isn't true, he just pretended it:

My moron brother Theo wanted a self portrait that he could show to the buyers in Paris. So I started one only to find I couldn't paint ears properly. Some people can't paint hands or horses, I can't paint ears. I tried my self portrait in a hat but I couldn't get the ear out of sight. In desperation I wore the hat and tied a rag around my head and it seemed to work. Theo wrote back demanding what had happened to my ear, I told him I had cut it off while shaving.
He believed me (he must think I'm a basket case). but he couldn't tell customers that. So the fool embellished the story for his artsy fartsy friends and now all of Paris thinks I cut off my ear for the love of some woman. Now I have to wear the rag around my head all the time. The people of Arles are starting to think me weird.
