Good question. You could download TOR if the main site is accessible. I don't know if they are targeting sites like Tor; It would seem a bit Dodgy to me.
Having TOR does not make you 100% anonymous, but it's harder for them to spot you. A Tor Bridge adds another layer of protection.

For Mail Encryption you could use GPGMail (on Mac OS X) and Pidgin for chatting. Although, I haven't found a way to encrypt iOS iChat.
Nothing will make you 100% anonymous, but at least you make them work twice as hard.
