I think part of it is that, aside from potatoes, we didn't really eat a lot of starchy shit as staples growing up. Most people I know LOVE pasta and shit, but I can take it or leave it - we just didn't have it often. My dad always bought fresh stuff for dinner, just about every night, and made fresh lunches for us every day. So it's something that I learned from a young age that doesn't really require much thought/effort.
That said, I don't purposely exclude it from my diet either. For example, I won't turn my nose up if I'm at a restaurant and can't have a strict gluten free meal. I'd say my diet is about 90% gluten free.
It's all about moderation. I couldn't ever NOT have, say, a hamburger with a proper starchy bun, lol. Or enjoy a pizza night...or even a hot dog! There is just some stuff one has to allow themselves to enjoy - as long as you aren't overdoing it.
