Just ordered some Sichuan food. The combination of chilies and oil should make for an interesting shit. I will post the after pics.

I didn't mean that my recipe would create something that could be put on a spice rack but I wouldn't call it a condiment either. Condiment brings things like ketchip, mayo, mustard to mind. The hot pepper paste only requires a pea sized amount as opposed to squeezing a bunch of relish out of a bottle.

What dish did you order? When I was in Shanghai, the Szechuan restaurant I went to had hundreds of numbing peppercorns in their dishes and so much chili oil.

It is a condiment, at best a sauce.

Making spice involves dry ingredients only.

I ordered a bunch of stuff, the best things I can't order as they do not deliver well (think fish poached in oil with peppercorns and chilies.) Chinese food is atrocious, but sometimes there is no choice.

The spiciness is the only redeeming thing about the food. It all comes out as liquid the next day. This is not a product of Chinese cuisine, but a product of how incompetent the Chinese are at doing anything.

Chinese food done right is win...however they are simply unable to do anything right due to a complete lack of caring.

It is sad honestly.

Depends on the culture. The North East and South East US gravitate towards using less spice. We had to ask for extremely hot this one time at an Indian joint in Miami Beach.

The South West and Western US have greater affinity towards spicy food, it's proximity to Mexico is partly to blame. I love it, but I can't keep up with my boyfriend, he likes his food really, really hot!

some dude at work by the way gave me a cautionary tale fellas.

this guy was a spice master/machine. he actually had a massive ulcer from all the spices he had ingested over years. they had to put him in surgery to repair it. apparently he cant taste very much of anything now and he no longer can eat anything spicy.

im not sure how much i believe him but thats the story i was told.

What was he eating though? Blair's mega death sauces?

What a strange theory. Volcanic rectal activity almost makes me regret having eaten spicy food, almost. But I enjoy it so much that it's worth the pain.

Not being able to stand spicy food is not cuz someone's a pussy or something. Some people just can't take it. Personally, I love spicy food and it doesn't really make me live on the toilet bowl either
