The orchestral piece at the end of Requiem for a Dream was amazing--since then it has also been used in a bunch of movies, including Lord of the Rings. The frenetic electronica (Brainbug, etc.) of Darren Aronofosky's excellent first movie, Pi, also complemented the action well.
Giorgio Moroder's incredible synth productions for Midnight Express are also among my all time faves (of all people, TA's should be able to appreciate the beauty of Moroder's "The Chase" and "Midnight Express").
Ennio Morriccone's spaghetti western instrumentals ("The Good, the Bad, and the Ugly" will always be class.
Mike Oldenfield's "Tubular Bells," Carl Orff's "Oh Fortuna! (from the opera Carmina Burana), and Harold Faltermeyer's "Axel F" are also up there.
We could also get into a discussion about the best soundtracks of all time, but we'll save that for a different thread...
