The taste was great, as the avocado was really nice and ripe, the salmon tasted fresh and clean, and the sesame seeds were toasted to perfection. But, they managed to get the price down by making the rolls quite small and not putting in a generous amount of fish.

It was still value for the money, and a nice change from feeling ripped off by the majority of sushi shops in Toronto. If I was in the area, and wanted a quick, cheap sushi lunch, I would most definitely go back.

I had such a craving for it that I went back to Fuji in Guelph on Saturday with some friends. SO good.

Here's a great article for beginners:

http://www.thestar.com/article/603883

-------------

CHOPSTICKS DOS AND DON'TS

Do not rub chopsticks together vigorously in an attempt to sand them down and remove any splinters. Better to remove any wisps of bamboo with your fingers or, better yet, ask for a new pair.

When not eating with chopsticks, place them on the chopstick rest. Do not rest them on the side of the soy sauce dish.

Do not leave chopsticks standing straight up in a bowl of rice. It too closely resembles the incense burned at funerals.

Do not pass food to someone else's plate with the end of the chopsticks you ate from. Turn them around and use the square end.

Don't hang chopsticks out of the mouth.

Decide what you want to eat from a sushi plate before you pick it up. It is rude to hover above the plate, moving the chopsticks around indecisively.

The chopsticks should be held close to the top, particularly by women, since it makes their fingers and hands look more elegant.

Never point with chopsticks.

If eating in the style of the samurai, you would never allow more than the first inch of the chopsticks to enter your mouth

----------------------

SUSHI GLOSSARY

Maki: Seasoned sushi rice filled with fish or vegetables and rolled up in a sheet of seaweed known as nori. In Japan, usually limited to a single ingredient, but here has grown to monstrous proportions, so much so that it is often impossible to eat in one bite.

As for the addition of avocado, tempura or mayonaise-based sauces, these are definitely not traditional in Japan, but have become so commonplace in North America that Keiichi Masuda says it is not possible to do business without serving them.

How to eat: Chopsticks or fingers. It is okay to mix wasabi into soy dish and dunk your maki.

Nigiri: A delicately seasoned bundle of rice topped with wasabi and a strip of raw fish or seafood, usually served with a house-made sauce designed to complement the sushi. The sauce contains soy sauce.

How to eat: Pick up with thumb on top of fish, gently turn upside-down and pass top of fish through sauce. Place fish-side down on the tongue and eat in one bite.

Sashimi: Thin slices of raw fish.

How to eat: Use chopsticks to add a dab of wasabi to the top of fish and dip lightly in soy. Eat in one bite.

The new Sushi Shop on Yonge and Carlton is really yummy. We try to go at least once a week (there's no reason not to since it's less than a 30 second walk from home ). Their Vancouver Maki = om nom nom nom.
