Where are you getting the idea that seasoning = over seasoning? Of course you shouldn't over salt meat, or anything, for that matter.

Yeah, there are big differences of opinion on this one. I prefer to salt it heavily with kosher salt *right* before it goes on the grill. And I mean immediately before. In fact I salt and pepper one side and immediately throw that side down on the grill and then salt and pepper the other side. I feel like the high heat sears it and helps retain the moisture and the salt and pepper give a really nice crust. I also brush the steaks very lightly with olive oil. I've been very happy with the results for a while now but would be open to try some new some cooking methods and seasonings.

Exactly. I'm just saying, Jen's method of coating both sides of the steak in Lawry's 12 hours prior to microwaving is just horrible.
